Pistachios; Cyprus

You have never tried a pistachio until you've tried a freshly picked pistachio. None of this from a bag, covered in salt stuff. It will take you hours of sitting around a table, drinking coffee or lemonade in the shade of the vine covered trellis, peeling them from their casing, but they so very worth it.

My month long visit to Cyprus included so much family & so, so much fresh fruit. Theo Naki is a pro at picking (from cacti on the sides of the road!) & peeling these cactus fruit without pricking his hands. The colors of the remains glow in the drywall bucket trash can.
